Sơ chế: Lau khô cá hồi, lạng bỏ da, cắt hạt lựu. Bỏ gốc nấm đông cô, rửa sạch, để ráo, cắt hạt lựu, nấm mèo cắt nhuyễn. Cắt nhuyễn rong biển, hành tím bằm nhuyễn, gừng cắt sợi nhuyễn.
Trộn nhân: Cho cá vào tô ướp với 1gr tiêu xay, 10gr gừng, 1gr hạt nêm, 20gr hành tím. Trộn đều tất cả lại rồi tiếp tục cho 100gr giò sống vào cùng với nấm đông cô, nấm mèo, rong biển. Trộn đều tất cả cho quyện vào nhau.
Lấy từng miếng bánh tráng thấm nước cho bánh hơi dẻo lại cho nhân vào và gói lại. Bắc chảo lên bếp, cho 500 ml dầu vào, dầu nóng cho từng cuốn nem vào chiên. Khi nem chín vàng, vớt ra cho ráo dầu.
Pha nước chấm: Cho 25gr đường trắng vào chén cùng với 15ml nước lọc, 25ml nước mắm, 1ml nước cốt chanh khuấy cho tan đường, nếm lại vừa ăn rồi cho 5gr tỏi và 2gr ớt bằm vào.
Xếp nem ra dĩa dọn ăn kèm với rau sống chấm nước mắm chua ngọt. Yêu cầu thành phẩm: Nem chiên vàng giòn, vị vừa ăn không bị tanh mùi cá, nhân dẻo thơm.
