Bắp cải, hành tây cắt miếng vuông nhỏ đẹp mắt. Khoai lang gọt vỏ, thái mỏng. Thịt gà làm sạch, thái nhỏ, miếng mỏng một chút cho nhanh ngấm gia vị. Trong tô lớn trộn đều: Tương ớt, ớt bột, gừng, tỏi băm, nước tương, đường trắng, tiêu, bột cà ri, rượu và dầu mè để làm nước sốt. Ướp gà với 2/3 chỗ sốt trong khoảng 1-2 tiếng.
Cho dầu ăn vào chảo đun nóng rồi trút gà vào xào cho đến khi gà chín, thịt săn lại rồi cho ra đĩa.
Tận dụng đâu trong chảo, cho bắp cải, hành tây và khoai vào xào, đảo qua rồi cho nốt phần nước sốt vào xào cho ngấm gia vị.
Khi rau chín thì cho thịt gà vào xào cùng, rắc thêm ít hạt mè cho thơm rồi tắt bếp.
