Mỗi năm đến mùa cherry, mình lại gom góp làm một món gì đó về cherry để làm kỉ niệm vì mình thật sự rất cuồng loại trái này. Cherry vào mùa đỏ thẫm nhìn thật thích mắt. Món bánh này, mình sử dụng công thức và cách làm đế tart thông thường khá đơn giản, chính giữa là lớp lớp flan trứng sữa béo ngậy và kết thúc bằng lớp mứt cherry chua ngọt handmade. Công thức này sẽ không gây khó cho các bạn mới học làm bánh lắm đâu, cùng tìm hiểu nhé!
Bơ lạt để mềm ở nhiệt độ phòng nhưng không đến mức chảy. Cho 90 gram đường dánh đến khi hòa mượt. Thêm 1 quả trứng gà và 3ml tinh chất vanilla vào đánh đều. Chia bột mì thành 3 phần, ray từ từ vào hỗn hợp, đánh đến khi một khô lại và tơi ra thì nhào nhẹ khoảng 3 phút sau đó bọc kín cho vào ngăn mát tủ lạnh khoảng 30 phút.
Cherry rửa sạch, tách đôi, bỏ cuống và hạt. Trộn cùng 110 gram đường còn lại, để khoảng 10 phút.
Sau khi đường tan bớt, cho cherry lên chảo, thêm 1 ít nước sên đến khi nhuyễn đặc thì thêm ít nước cốt chanh, sên khoảng 5 phút rồi tắt bếp.
Đế bánh tart, thoa bơ một lớp mỏng để chống dính. Dàn bột mỏng khoảng 1.5cm viền theo khuôn bánh. Dùng nĩa châm lỗ trên mặt bánh, nướng với nhiệt độ 180 độ C trong vòng 15 phút. Trong thời gian đó, pha 1 lòng đỏ trứng, sữa tươi và sữa đặc, khuấy đều. Đế bánh hơi vàng, bạn rót hỗn hợp trên vào, nướng thêm 20 phút ở nhiệt độ 160 độ C đến khi viền bánh vàng ươm và flan trứng chín.
Rưới mứt cherry lên mặt bánh và thưởng thức thôi. Bánh có thể bảo quản trong tủ lạnh 1 tuần để ăn dần. Đế bánh tart giòn tan, flan trứng béo mềm và mứt cherry chua ngọt làm nên 1 tổng thể hài hòa. Chúc bạn thành công và có được một mẻ bánh như ý nhé!
