Cá hồi ướp muối là một trong những món ăn phổ biến của Nhật Bản. Kỹ thuật muối cá hồi cũng không quá phức tạp mà sản phẩm lại ứng dụng được trong rất nhiều món ăn hàng ngày. Nếu yêu thích ẩm thực Nhật chắc chắn bạn không thể bỏ qua món ăn này.
Rửa sạch cá hồi với nước lạnh và thấm khô bằng khăn giấy. Dùng dao cắt cá hồi theo đường chéo để miếng cá có độ to bản và đẹp mắt hơn. Đổ rượu sake và xoa đều lên bề mặt các miếng cá. Sau 10 phút, thấm nhẹ các miếng cá bằng khăn giấy cho khô. Rắc muối biển vào phần da cá. Sau đó rắc chỗ muối còn lại trên cả hai mặt của miếng phi lê. Lượng muối sử dụng ở công đoạn này nhiều hơn lượng muối dùng để ướp ở phần da cá.
Lót 1 lớp khăn giấy xuống khay thủy tinh có nắp kín, khăn giấy sẽ giúp hấp thu độ ẩm từ cá tiết ra trong quá trình muối. Xếp vài miếng phi lê cá lên trên rồi lại phủ 1 lớp khăn giấy. Xếp lớp phi lê cá thứ 2 lên trên và phủ tiếp 1 lớp khăn giấy nữa. Đậy nắp chặt rồi đem cất trong tủ lạnh tối thiểu 2 ngày. Sau 2 ngày kiểm tra sẽ thấy thịt cá trở nên chắc và sẫm màu hơn, dùng khăn giấy thấm nhẹ miếng cá để hút ẩm (nếu có).
Đặt cá trên khay nướng có lót giấy bạc .Quay phần da cá lên trên để sau khi nướng da cá có độ giòn. Cho cá vào lò nướng ở nhiệt độ 200 độ C trong vòng 20 phút rồi hạ nhiệt xuống 150 độ C thêm 5 phút nữa đến khi các cạnh bắt đầu chuyển màu vàng và phần da có độ bóng thì lấy cá ra. Cá hồi muối sau khi nướng xong ăn kèm với một lát chanh tươi. Hoặc dùng chung với các món cháo, canh miso, cơm nắm (onigiri) hoặc các suất cơm hộp (bento).
