Xoài xanh mua về rửa sạch sau đó nạo vỏ và thái miếng vát chéo dài cỡ 1 ngón tay, dày 1,5-2cm.
Cho xoài vào âu sau đó đổ nước vôi trong cho ngập, ngâm xoài khoảng 4 tiếng thì vớt ra rửa lại thật sạch cho hết mùi vôi.
Đổ nước vào nồi đun sôi thì cho phèn chua vào nồi, tiếp theo bạn cho xoài vào chần sơ qua khoảng 1 phút là vớt ra ngay, ngâm xoài vào chậu nước lạnh 5 phút cho nguội rồi vớt ra để ráo nước.
Đổ xoài vào âu và đem cân lên, cứ 1kg xoài thì cho 600-700gr đường. Trộn đều và ướp xoài 3-4 tiếng hoặc tới khi đường tan hết, trong khi ướp đường thi thoảng đảo đều để xoài ngấm hơn.
Đổ tất cả âu xoài vào chảo và bật bếp nấu cho sôi thì để lửa nhỏ vừa, đun liu riu cho tới khi nước đường keo lại, thi thoảng đảo đều. Miếng xoài đã trở nên trong và nước đường rút cạn bớt thì tắt bếp.
Gắp từng miếng xoài xếp lên khay có lót giấy nến, đem phơi nắng hoặc hong gió cho miếng xoài hơi khô lại, lúc này mứt xoài sẽ dẻo và trong thì cho vào hũ sạch, đậy nắp kín bảo quản nơi thoáng mát hoặc trong tủ lạnh dùng dần.
